How to Prevent Cupcakes from Pulling Away from Their Liners

How to Prevent Cupcakes from Pulling Away from Their Liners

I’m asked, “How do I prevent cupcakes from pulling away from their liners?” more often than any other question.  Here are some things that I have found that can cause this to happen and some suggestions to help prevent it:

  • This may be happening because of the type of liner that you are using.  While I love the idea of using bleach-free liners, I’ve found that those pull apart from the cupcakes more than other liners.  I’ve been very happy with the liners from Fancy Flours.   
  • Cupcakes that are very moist are more likely to pull away.  Cupcakes that contain fruit are major culprits.  One thing that helps is to cut the fruit into smaller pieces so that there are no big, wet fruity chunks pressed against the liners.
  • What you do with the cupcake after it comes out of the oven can also affect pulling away.  As soon as the cupcakes come out of the oven, take them out of the baking tins.  If you let them sit in the tins, steam builds up and you get that moisture problem I just mentioned.
  • I’ve also heard that baking at an incorrect oven temperature can cause problems.  I have no personal experience with this, but do make sure that your oven is correctly calibrated.

If your cupcakes pull away from their liners, the best thing to do is to cover them up with decorative cupcake wrappers.  That way, no one will know!

    I find that if I store them in the refrigerator the don’t pull away from their liners.

    I finally found an answer to the cupcake liner problem!! I’m ONLY 68 and have been baking for probably 63 of those years. I put 2 tips together this morning and I tried today. Bake them a little bit past done. I always take them out early to keep them moist. I took them out of the pans immediately and set them an inch or so apart so they wouldn’t steam each other. Worked like a charm!!

      Hi ,

      Thanks for that, I found that baking mini cupcakes are the worst as if they are slightly over baked then they turn out to be like rock- cakes, but I noticed that pulling away mostly happened when I under fill the liners with batter.
