Stuffed French toast casserole is the most decadent of all French toasts. It’s like a French toast sandwich filled with sweet, delicious filling! This overnight stuffed French toast is loaded with cream cheese and both raspberry jam and fresh raspberries! It’s an overnight recipe, so you can prep it in advance and, in the morning, all you have to do is bake it.

I’m a bit addicted to overnight French toast casserole. It’s so easy to make for company and it’s always a hit. I adore any French toast casserole and my overnight Bananas Foster French toast. But, this raspberry stuffed French toast has become a new favorite. The raspberry cream cheese filling is to die for!

How to Make Stuffed French Toast Casserole

To make stuffed French toast casserole, start by placing a layer of bread along the bottom of a casserole dish. I used the Aroma DoveWare rectangular casserole dish.

You can use any type of bread, but I always recommend thick slices of brioche. Brioche is buttery and rich and bakes up to a perfect French toast every time.

Next, spread the filling and place any toppings on the bottom layer of bread.

I put a nice layer of cream cheese, raspberry jam, and fresh raspberries.

Then, top with another layer of bread. You are making sandwiches here!

Pour a mixture of eggs, milk, and heavy cream over the entire casserole.

Cover and refrigerate overnight.

Keep the cover on during the bake to prevent the toast on top from burning.

Serve immediately. The French toast is sweet enough that it doesn’t require syrup. You may want to serve it with whipped cream, fresh berries, or both.

Tip: If you aren’t serving it right away, you can store the French toast in the refrigerator for up to a week or freeze slices in an airtight container for several months.

Stuffed French Toast Variations

There are so many options for making stuffed French toast dishes. Use this same recipe but try replacing the raspberries and raspberry jam with one of these combinations:

  • strawberries and strawberry jam
  • peaches and peach jam
  • baked apple slices and apple butter
  • chocolate chips
  • caramelized bananas

Best Tips for Making Stuffed French Toast

  • Make sure the fillings are spread evenly over the bottom layer of bread. If necessary, warm them for a few seconds in the microwave to help make them more spreadable.
  • Keep the pan covered during the bake so the French toast doesn’t burn.
  • Use an enriched bread like brioche.
  • Make more stuffed French toast than you think you will need. Because you are essentially making sandwiches, people are inclined to take a whole sandwich as their portion – which is larger than they would have taken with regular French toast.

Ingredients

  • 1 pound brioche cut into 12 slices
  • 8 ounces cream cheese room temperature
  • 8 ounces raspberry jam
  • 9 ounces fresh raspberries
  • 8 large eggs
  • 2 cups whole milk
  • 1/2 cup heavy whipping cream
  • 1/4 cup granulated sugar
  • 2 teaspoons vanilla extract

Instructions

  • Grease a 3 quart casserole dish, such as a 9"×13" casserole dish.
  • Place half of the brioche slices into the dish without overlapping them. It's OK to squeeze them a little to make them fit.
  • Spread the cream cheese evenly over the brioche.
  • Spread the jam evenly over the cream cheese.
  • Evenly distribute the raspberries on top of the jam.
  • Top with the rest of the bread, creating a bunch of sandwiches.
  • In a large bowl, whisk together the remaining ingredients and pour evenly over the entire dish.
  • Cover the casserole dish and refrigerate overnight.
  • When ready to bake, preheat the oven to 350 F.
  • Keep the casserole dish covered and bake for 90 minutes or until no liquid remains.
  • Serve immediately.

Notes

  • Make sure the cream cheese and jam are spread evenly over the bottom layer of bread. If necessary, warm them for a few seconds in the microwave to help make them more spreadable.
  • Make more stuffed French toast than you think you will need. Because you are essentially making sandwiches, people are inclined to take a whole sandwich as their portion - which is larger than they would have taken with regular French toast.
