You are probably not alone if you questioned my sanity when you read this post’s title, “Chocolate Chip Cookie Grilled Cheese Sandwiches.”  But if you’ve enjoyed other sweet and salty desserts (like salted caramel or chocolate covered pretzels) and other cheesy desserts (like cream cheese frosting or cheesecake), pairing chocolate chip cookies with melted cheese isn’t such a huge stretch.  Chocolate chip cookies and melted cheese are a mash-up that was meant to be.  The stretchy, oozey cheese and the melty chocolate chips together are a playground for your palette.

What’s best is that chocolate chip cookie grilled cheese sandwiches are super easy to make, so even if you don’t like them, you won’t have wasted hours of time or lots of money.

How to Make Chocolate Chip Cookie Grilled Cheese Sandwiches


Ingredients

Directions

  1. Preheat oven to 350 F.
  2. Cut cheese into thin slices and place between two cookies.
  3. Place cookie sandwiches onto a cookie sheet lined with parchment paper.
  4. Bake for five minutes or until cheese is melted.

Tip: This method works even better if the cookies are still hot from the oven.  The cheese will melt very quickly and you may not even have to put the cookies in the oven.

In my original concept for chocolate chip cookie grilled cheese sandwiches, I grilled the chocolate chip cookie dough instead of starting with baked chocolate chip cookies.  I cooked two small balls of chocolate chip cookie dough on a hot griddle, flattening them as they were cooking.  They ended up looking a bit like pancakes.  When the first side was done, I flipped them and let them cook a little longer.  Then, I topped one of the cookies with cheese and pressed the other one on top to make a sandwich.

The flaw in this method was that middle of the cookie didn’t always get cooked before the edges started to burn.  If you like underdone chocolate chip cookies, this may not be such a problem for you.  The gooey cookies with crispy edges and gobs of chocolate may be just what you are looking for.

Variations

Thinking about making grilled cheese with cookies instead of bread opens up a whole world of possibilities.  What other types of cookies do you think would work well, and which cheese would you use?

    I am intrigued! I LOVE chocolate chip cookies (and my wife’s recipe is the best there is), cheese, and grilled cheese sandwiches. I’ll answer your questions, and pose one of my own:
    1. I would use a gruyere cheese, just because I think it’s good with everything…it seems like a safe choice.
    2. I think homemade ginger snaps would be great for this as well. I think they would be interesting with Port Salut cheese on the inside, though I don’t know how that would melt.
    3. What was your inspiration for this recipe? It is certainly a bold experiment!

    I would like to pretend that I would try these but I honestly don’t think that I am going to! Sorry!! I think that they are just a little bit too far out there for me unfortuantely!!

    At first, I thought these were a little crazy, but I eat my burger and fries while drinking a milkshake and it seems like salty and sweet is everywhere. Paula Deen also makes a fudge with Velveeta. If I had some cookies and some cheese, I would try one of these just because I want to know what they are like.

    I’ve never gone to full-on grilled cheese cookies before, but I have ended up having cookies with cheese and dips at parties where we ran out of crackers and chips early. Peanut butter cookies and snickerdoodles go well with sharp cheddar in my opinion, especially if the cookie is just warm from the oven. I could totally see the combo working as a sandwich. Chocolate chip cookies go okay with hummus, too.

    I tried this last night and it’s tasty! I didn’t have the time to make my own cookies so I bought some from our fancy grocery in town (sorry if this is blasphemy). Based on the recommendation of the cheese lady, I went with NY cheddar. Can’t wait to try different combos! It’s quick, different, easy and open to lots of variations. Only warning is that it’s really rich so half of a sandwich would’ve been plenty.

  8. Ginger snaps or digestives/graham crackers with cheese – absolutely. Digestives with brie is one of the greatest cheeseboard inventions. And I love the idea of chocolate chip cookies with potato chips in, so why not a chocolate chip grilled cheese? I’m struggling with brain-tasting it, I’ll simply have to try it out. So glad to have found your blog! :D

    Definitely interesting. I don’t really combine cheese and chocolate chips before. I wonder how you guys come up with this recipe anyway. I do love to eat something intriguing like this one. I guess out of curiosity. Will let you know if I made one.
