My apple cobber cupcakes are quite dense (like a cobbler) so I lightened them up a little by adding vodka to the batter and finished them with a boozy vodka frosting.
Prepare batter according to the instructions in the apple cobbler cupcake post, but stir in the 1/4 cup of vodka just before filling cupcake liners and baking.
Frosting Instructions
Beat butter in a medium-sized mixing bowl on high speed for three minutes or until light and fluffy.
Mix in powdered sugar a little bit at a time until combined.
Mix in vodka.
Spread on cooled cupcakes.
Optionally, sprinkle green sanding sugar around the edge of the cupcakes.
Notes
The vodka makes this frosting too thin to pipe so it must be spread onto the cupcakes.
