Appletini Cupcakes

My apple cobber cupcakes are quite dense (like a cobbler) so I lightened them up a little by adding vodka to the batter and finished them with a boozy vodka frosting.

Frosting Ingredients

  • 1 cup unsalted butter room temperature
  • 3 cups powdered sugar
  • 1/4 cup vodka
  • green sanding sugar optional


Cupcake Instructions

  • Prepare batter according to the instructions in the apple cobbler cupcake post, but stir in the 1/4 cup of vodka just before filling cupcake liners and baking.

Frosting Instructions

  • Beat butter in a medium-sized mixing bowl on high speed for three minutes or until light and fluffy.
  • Mix in powdered sugar a little bit at a time until combined.
  • Mix in vodka.
  • Spread on cooled cupcakes.
  • Optionally, sprinkle green sanding sugar around the edge of the cupcakes.


The vodka makes this frosting too thin to pipe so it must be spread onto the cupcakes.
