Add bananas and brown sugar and stir until sugar is completely melted and bananas are coated in the sugar.
Continue stirring for another three minutes or until sauce formed by the brown sugar thickens. Watch closely to make sure that the sugar doesn't burn.
Remove from the heat.
Brioche French Toast Instructions
Grease a 6 cup baking dish or oven-safe skillet such as a 10" round or an 8" square baking dish.
Evenly distribute the brioche in the dish and top with caramelized bananas and all of the caramelized sugar it is sitting in.
In a large bowl, whisk together the remaining ingredients and pour evenly over bread.
Cover the casserole dish and refrigerate overnight.
When ready to bake, preheat the oven to 350 F.
Uncover and bake for 90 minutes or until no liquid remains.
Notes
For An Oven-Baked or Microwave Alternative to the Caramelized Bananas:
Use the same ingredients.
Place bananas in an oven-safe or microwave-safe baking dish, cut the butter into small pieces and distribute them evenly over the bananas.
Top with the brown sugar.
Bake at 400 F for 20 minutes or microwave on high for two minutes (microwave time may vary based on the power of your microwave).
Use a spoon to cover any bare spots on the bananas with caramel sauce before using.
This French toast lasts about one week in the refrigerator or several months in the freezer if removed from the casserole dish and sealed in an airtight container.
