Using an electric mixer, mix butter and sugar until light and fluffy.
Mix in almond meal until fully combined.
Mix in eggs until fully combined.
Mix in vanilla, flour, and salt until just combined.
Use in your favorite recipe or refrigerate until ready to use, up to one week.
Notes
Makes about two cups of almond cream - enough for one 11" tart.If you don't have almond meal, you can make your own by grinding almonds in a food processor.
