  • 1/2 cup buttermilk
  • 660 milliliters Belgian beer two 330 milliliter bottles of imported Belgian beer
  • 4 cups chocolate chips Belgian chocolate works well

  • Preheat Belgian waffle maker to medium heat.
  • In a large bowl, whisk together flour, salt, baking powder, baking soda, sugar, and cinnamon.
  • Separate eggs, keeping egg yolks together in another large bowl.
  • Whisk together egg yolks, melted butter, buttermilk, and beer.
  • Stir flour mixture into egg yolk mixture until just combined.
  • Whisk egg whites until stiff peaks form. Gently fold into batter until just combined.
  • Fold in chocolate chips.
  • Cook waffles according to the waffle maker’s instructions.
  • Serve immediately or keep warm in a 200 F oven.
