Ingredients

Cupcake Ingredients

  • 1/2 C unsalted butter room temperature
  • 3/4 C sugar
  • 2 eggs
  • 4 oz tamarind concentrate I realize this is not an easy item to find. Look for it at a Thai grocer or buy it online.
  • 1/4 C apple cider vinegar
  • 1 1/4 C flour
  • 1 tsp baking soda
  • 1 tsp baking powder

Lemon Glaze Ingredients

  • 1 C powdered sugar
  • 2 tsp milk
  • 1/4 tsp lemon extract

Instructions

Cupcake Instructions

  • In a medium-sized mixing bowl, cream butter and sugar.
  • Mix in eggs, tamarind, and vinegar.
  • In a small mixing bowl, whisk together flour, baking soda, and baking powder.
  • Slowly mix the dry ingredients into the wet ingredients until just combined.
  • Place heart-shaped silicone cupcake liners on a cookie sheet and fill 3/4 full.
  • Bake at 350 F for 20 minutes or until cupcakes bounce back when lightly touched.

Lemon Glaze Instructions

  • Mix all ingredients together and spread onto cooled cupcakes.
