Anti-Valentine’s Day Cupcakes
Anti-Valentine's Day parties have become a commonplace way to deal with the hype. These cupcakes fit right in.

Servings: 10 cupcakes
- 1/2 C unsalted butter room temperature
- 3/4 C sugar
- 2 eggs
- 4 oz tamarind concentrate I realize this is not an easy item to find. Look for it at a Thai grocer or buy it online.
- 1/4 C apple cider vinegar
- 1 1/4 C flour
- 1 tsp baking soda
- 1 tsp baking powder
Lemon Glaze Ingredients
- 1 C powdered sugar
- 2 tsp milk
- 1/4 tsp lemon extract
In a medium-sized mixing bowl, cream butter and sugar.
Mix in eggs, tamarind, and vinegar.
In a small mixing bowl, whisk together flour, baking soda, and baking powder.
Slowly mix the dry ingredients into the wet ingredients until just combined.
Place heart-shaped silicone cupcake liners on a cookie sheet and fill 3/4 full.
Bake at 350 F for 20 minutes or until cupcakes bounce back when lightly touched.
