Raspberry, Oatmeal, and Hemp Seed Cobbler

Ingredients

  • 1 1/2 cup all-purpose flour
  • 1 1/2 cup rolled oats
  • 1 cup unsalted butter room temperature
  • 1 cup light brown sugar
  • zest of 1 lemon
  • 1 cup hemp seeds
  • 10 oz fresh or frozen and defrosted raspberries

Instructions

  1. In a large mixing bowl, mix the flour, oats, and butter until you have coarse crumbs.
  2. Mix in the brown sugar, lemon zest, and 3/4 cup of the hemp seeds.
  3. Use 2/3 of the mixture to evenly fill an 8" square baking dish.
  4. Spread the raspberries evenly over the filled baking dish.
  5. Top with the remaining third of the mixture.
  6. Top with the remaining 1/4 cup of hemp seeds.
  7. Bake at 350 F for 35-40 minutes or until the top is a golden brown.
  8. Serve warm with ice cream.
