Instructions
Cupcake Directions:
Preheat oven to 350 F.
In a medium-sized mixing bowl, mix together sugar, flour, baking powder, baking soda, salt, and butter until fully combined.
Mix in pine nut butter.
Mix in eggs, one at a time.
Mix in milk.
Fold in pine nuts.
Fill cupcake liners 2/3 full.
Bake for 20 minutes or until a toothpick inserted into the center of a cupcake comes out clean.
Frosting Directions
In a medium-sized mixing bowl, mix cream cheese, butter, and salt until light and fluffy (about three minutes on high speed).
Mix in powdered sugar a little bit at a time.
Mix in raspberry jam.
Spread or pipe on cooled cupcakes.
Top with a few pine nuts.
