In a medium-sized mixing bowl, beat butter, sugar, and brown sugar until light and fluffy.
Mix in egg.
Mix in mulled wine.
In a separate medium-sized mixing bowl, whisk together flour, cinnamon, cloves. baking soda, and salt.
Add dry ingredients to butter mixture and mix until just combined.
Drop balls of dough, each about two tablespoons, on a cookie sheet lined with parchment or a Silpat - two inches apart from each other.
Bake for 10 minutes or until golden brown.
Transfer to cooling rack to cool.
Icing Instructions
In a small bowl, mix powdered sugar and mulled wine until fully combined.
Spread or pipe on cooled cookies.
Notes
Triple the icing recipe if you prefer to cover the whole cookie with icing.In Anna's mulled apple cider cookie recipe, she uses apple cider that hasn't had mulling spices added to it and uses the mulling spices in the cookie batter. For my mulled wine cookies, I added mulled wine to the batter plus additional spices. If you don't want to take the time to make mulled wine first, you could use a non-mulled red wine in this cookie instead. But, it's the holidays, and I highly suggest making some mulled wine. You'll use just a little bit of it in the cookies and you can drink the rest! Cheers!
