Cut all seven crepes into football shapes. I suggest lining them up perfectly and cutting them all at once. This will ensure that they are all the exact same size. You might also want to cut a football shape out of paper to use as a template.
Place the first crepe on the surface you plan to serve it on. This could be a plate, a cake circle cut into a football shape, or something else.
Spread sour cream all over the crepe.
Top with the next crepe and cover that crepe with salsa.
Top with the next crepe and cover that crepe with black olives.
Top with the next crepe and cover that crepe with guacamole.
Top with the next crepe and cover that crepe with lettuce.
Top with the next crepe and cover that crepe with cheddar cheese.
Top with the next crepe and cover that crepe with refried beans.
Pipe sour cream onto of the beans to give the "cake" a football appearance.
Refrigerate until ready to serve.
Notes
I didn't specify quantities for each ingredient because you can add as much or as little as you like. Just be careful not to overfill each layer or the filling may spew out of the sides of the crepes.
