This started as a meringue frosting that failed, but we saved it by baking it into this custard.

Ingredients

large egg whites

or vanilla extract

Instructions
Whip egg whites and sugar until foamy and doubled in size.
Mix in vanilla bean paste.
Mix in butter, one tablespoon at a time.
Mix in cream of tartar.
Distribute evenly among ramekins. They should be about half full.
Bake at 200 F for about two hours.
Use a culinary torch to brûlée the top of each custard.
