Cranberry Eton Mess Cake

Eton mess cake is a layer cake based on the classic Eton mess dessert, made with fresh fruit and whipped cream with crushed meringues between the layers. The meringue gives each bite an unexpected crunch. This cranberry  version uses a spiced sponged cake and sugared cranberries instead of the typical strawberries to make it perfect for winter.

What Pan Do You Need to Make Eton Mess Cake?

This cranberry cake uses three 8″ round baking pans. You can use one pan three times, but it will take much longer.

What Are the Components of an Eton Mess Cake?

Sponge Cake

Similar to an angel food cake (or angel food cupcakes) or a chiffon cake, a sponge cake gets its lift from beaten egg whites. The egg whites make the cake super light and airy. It’s important to whip the eggs until stiff peaks form – the eggs will be glossy and hold their shape when you lift the beater.

Whipped Cream

There is whipped cream between every layer of the cake. You can easily make fresh sweet whipped cream using heavy whipping cream or use store-bought whipped cream.


Meringues are an important part of an Eton mess, but given that you are already baking a cake, you may not want to take the time to make homemade meringues. I typically buy mine from a grocery store.

Sugared Cranberries

This cranberry cake uses sugared cranberries. They are sweet and tart and pop in your mouth when you eat them.

To make them, coat cranberries in a warm sugar syrup. Place them in a single layer on a cookie sheet to dry. Before they are fully dry, roll them in more sugar and let them finish drying.

How to Assemble a Cranberry Eton Mess Cake

This cake gets its name because it is literally supposed to be messy. You don’t need to stress about it being neat. This makes it the perfect cake to bake with kids!

The cake is assembled in layers as follows:

  1. One 8″ cake
  2. Whipped cream, crushed meringues, sugared cranberries
  3. Another 8″ cake
  4. Whipped cream, crushed meringues, sugared cranberries
  5. The final 8″ cake
  6. Piped whipped cream (I use a large star tip), whole meringues, sugared cranberries

Sponge Cake Ingredients

  • 1 cup cake flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cardamom
  • 6 large large eggs separated
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 1 cup sugar
  • 1/4 cup orange juice

Whipped Cream and Topping Ingredients

  • 3 cups heavy whipping cream cold
  • 1/2 cup sugar
  • 30 small meringues homemade or store-bought
  • 6 ounces sugared cranberries


Sponge Cake Instructions

  • Preheat oven to 325 F.
  • In a small mixing bowl, whisk together cake flour and all of the spices. Set aside.
  • In a medium-sized mixing bowl, whip egg whites until frothy.
  • Add cream of tartar and salt.
  • Continue whipping until stiff peaks form. Set aside.
  • In another medium-sized mixing bowl, beat egg yolks until thick and pale yellow.
  • Mix in sugar until well-combined.
  • Mix in orange juice until well-combined.
  • Mix in flour and spice mixture until just combined.
  • Fold in whipped egg whites.
  • Divide batter evenly between three 8" round cake pans lined with parchment.
  • Bake for 30 minutes or until toothpicks inserted into the centers of the cakes come out clean.
  • Turn out cakes onto a cooling rack.

Whipped Cream and Assembly Instructions

  • In a large mixing bowl, whip heavy whipping cream until it starts to get fluffy.
  • Add sugar and continue whipping until it looks like whipped cream!
  • Top one of the cakes with 1/3 of the whipped cream, spreading to cover the whole cake but not the sides.
  • Crush 24 of the meringues into small pieces. You can do this by placing them in a sandwich bag and using a rolling pin.
  • Top the whipped cream with 1/2 of the crushed meringues.
  • Top the meringues with 1/3 of the sugared cranberries.
  • Place the next cake layer on top of the cranberries and top with half of the remaining whipped cream, spreading to cover the whole cake but not the sides.
  • Top with the remainder of the crushed meringues and half of the remaining cranberries.
  • Place the final cake layer over the cranberries.
  • Use a large star tip to pipe the remainder of the whipped cream onto the cake.
  • Decorate with whole meringues and the remainder of the cranberries.
  • Refrigerate if not serving immediately.



Don't worry about making the cake look totally perfect. It's supposed to be a mess. :)
