Key Lime Ice Cream Pie

This key lime ice cream pie takes no time to put together and is a complete hit at summer potlucks!

In college, my roommate used to make an ice cream pie that I went crazy for. A roommate that makes desserts is the best kind of roommate! It’s too bad that I screwed that one up by letting my boyfriend basically move in (yeah, I was that person and, yes, in retrospect I realize it was a poor choice).

The thing that I remember most about her pie was how great the salty pretzel crust worked with the sweet and tangy ice cream. I used a pretzel crust on my frozen mango margarita pie, but I was excited to discover how great it works for key lime ice cream pie as well! Given that I make so many pie recipes, I should have tried this key lime and pretzel combination sooner!

Key Lime Ice Cream

Since ice cream pie is only as good as the ice cream that you use, I make my pie with my homemade key lime ice cream using my new Cuisinart ice cream maker. If you have a store-bought key lime ice cream that you totally love, you can use that and make your life easier – but you should try my ice cream recipe sometime as it’s worth the effort.

How to Make a Key Lime Ice Cream Pie

To make a key lime ice cream pie, first prepare your pretzel crust and bake it in a pie pan. I like using mini 5″ pie pans for our family, but if you want leftovers or are serving a group, making larger pies works just as well.

Add softened ice cream to the hot pie crust and smooth out the top with a spatula. The hot pie crust will cause the ice cream to melt, making it easier to smooth out.

Freeze for several hours.

Lastly, decorate the pie however you would like and serve!

How Much Ice Cream Does it Take to Make an Ice Cream Pie?

For a 5″ ice cream pie (above), you’ll need one cup of ice cream. For a 9″ ice cream pie (below), you’ll need three cups of ice cream.

The Best Pie Crust to Use on an Ice Cream Pie

Pretzel Crust

I used a pretzel crust on my key lime ice cream pie. The sweet and salty combination works really well together. But, a graham cracker crust (with homemade graham crackers or store-bought ones) or an Oreo crust (again with homemade Oreos or store-bought ones) would also be great!

Shortbread crusts like the one I used in my Prickly Pear Lemon Bars would also be a nice choice.

Classic butter crusts don’t taste as good frozen as cookie-style crusts do.

Can You Use Regular Limes Instead of Key Limes?

If you can’t find key limes to decorate the pie with, you can use regular limes.

Can You Use Other Kinds of Ice Cream in This Ice Cream Pie?

If you don’t want to make key lime ice cream and you can’t find it in the store, but you want a similar taste profile to my key lime ice cream pie, you can try using any citrus flavored ice cream you make or purchase.

Key Lime Ice Cream Pie

Make this refreshing key lime ice cream pie as a summer treat!

Ingredients

Pretzel Crust

  • 2 cups small pretzels
  • 2 tablespoons sugar
  • 1/4 cup unsalted butter melted

Key Lime Ice Cream Pie

  • 3 cups key lime ice cream softened
  • whipped cream to taste
  • key limes thinly sliced, for garnish

Instructions

Pretzel Crust

  1. Preheat oven to 350 F.
  2. Crush all ingredients in a mini food processor (or place them in a sandwich bag and crush with a rolling pin) until they look like wet sand.

  3. Press into the bottom and up the sides of a greased 9" pie pan.
  4. Bake for 10 minutes.

Key Lime Ice Cream Pie

  1. Spread softened key lime ice cream evenly over the warm pretzel crust.

  2. Freeze for several hours. Then, cover with plastic wrap and continue to freeze until ready to serve. (If you cover with plastic wrap right away and it's not 100% smooth, you'll see plastic wrap lines in your frozen pie.)
  3. Decorate with whipped cream and fresh key limes.

To make this as smaller 5" pie, use half of the crust recipe and only 1 cup of ice cream.
