Regular readers know that it is a tradition of mine to make my apple cobbler cupcakes every year. Each time, I switch things up a little. I’ve made apple cobbler cupcakes with pumpkin pie frosting, with a crumb topping, and baked inside of a pumpkin cupcake. If it isn’t obvious, I’m love with the recipe. This year, I decided to give my apple cobbler cupcakes an adult twist and I turned them into appletini cupcakes!
My apple cobber cupcakes are quite dense (like a cobbler) so I lightened them up a little by adding vodka to the batter and finished them with a boozy vodka frosting. They taste just like a good appletini should (full of apple flavor, spices, and alcohol – not fake apple candy flavoring).
These appletini cupcakes were a hit with my friends, especially because they were baked in Cakes Under The Influence’s adorable martini-shaped baking cups. How fun is it to be able to cheers with a cupcake?!
The Cakes Under the Influence kits are really easy to use.
They come with special silicone molds that fit in standard cupcake tins.
The kits also come with metal baking cups that fit into the silicone molds. Place Cakes Under the Influence’s custom-sized liners into the metal baking cups and fill with batter, just as you would any other cupcake liner.
To serve the appletini cupcakes, remove the liners from the metal cups and drop them into the special drink glasses that come with the kit. If you can bake cupcakes, you can make these cocktail cupcakes!

- See apple cobbler cupcakes
- 1/4 cup vodka
- 1 cup unsalted butter room temperature
- 3 cups powdered sugar
- 1/4 cup vodka
- green sanding sugar optional
Prepare batter according to the instructions in the apple cobbler cupcake post, but stir in the 1/4 cup of vodka just before filling cupcake liners and baking.
Beat butter in a medium-sized mixing bowl on high speed for three minutes or until light and fluffy.
Mix in powdered sugar a little bit at a time until combined.
Mix in vodka.
Spread on cooled cupcakes.
Optionally, sprinkle green sanding sugar around the edge of the cupcakes.
The vodka makes this frosting too thin to pipe so it must be spread onto the cupcakes.
