Quick poll: Are you an introvert or an extrovert? I am wondering today if one personality type is more drawn to baking.
When I take personality tests, I usually come off as a very borderline extrovert. I definitely have introverted tendencies. I’m obsessed with aerial silks (I even have one in my garage) and sometimes I can best achieve a moment of zen all by myself, climbing high and flipping myself upside-down (often with music streaming and sometimes in complete darkness). But, more often than not, it takes gathering with friends, sipping joyfully on tea, and noshing on a plate of mini donuts to get me out of a slump. Baking hits my introverted side – I get to be alone with a mixer – as well as my extroverted side – it’s an excuse to get together with people.
While it may be different for extreme extroverts (please tell me), I’m a little picky about my people. There are some people I just can’t handle on certain days and there are the friends that I want with me all of the time – the ones that lift me up. The same thing applies to my teas. Right now, my tea BFF is Zen™ by Tazo® Tea. (I’m so excited to have Tazo as a sponsor of this post.) Zen is a blend of green tea with lemongrass and spearmint. I not only like to drink Zen tea, I also use it to flavor this coconut donut glaze. The Tazo tea creates a vibrant botanical flavor that goes perfectly with the donuts! It’s easy to use tea in glazes – just use tea instead of the water or milk that you would normally use!
Other than their fabulous glaze, you should know that my coconut donuts are baked (not fried) so they are much easier to make than regular donuts. I use a mini donut pan, but you could also make them as donut holes using a mini muffin pan. I use coconut milk and coconut oil in the recipe to give them a rich coconut flavor.
Baked Coconut Donuts with Zen Glaze
- 2 cups all-purpose flour
- 1 cup sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs room temperature
- 3/4 cup full-fat coconut milk
- 3 tablespoons unrefined coconut oil melted
- 2 tablespoons lime juice
- 3 1/2 cups powdered sugar
- 1/4 cup + 3 tablespoons brewed Zen tea by Tazo
Preheat oven to 325 F.
In a medium-sized mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
In a separate medium-sized mixing bowl, whisk eggs, coconut milk, coconut oil, and lime juice.
Mix the dry ingredients into the wet ingredients a little at a time until just combined.
Evenly distribute in well-greased mini donut pans.
Bake for 15 minutes or until the donuts bounce back when lightly touched.
Transfer donuts to cooling rack.
Mix powdered sugar and tea together in a medium-sized bowl until you have a thick but still slightly runny glaze. If needed, add extra tea a teaspoon at a time.
Pour over cooled donuts.
I made the green stripes by making a little bit more glaze with a little less tea (so that it is thicker and pipe-able) and adding green food coloring.
