My popsicles are made with fresh strawberries, sweetened with a touch of sugar, and enhanced with a little balsamic vinegar and a splash of lemon juice.
Place a parchment-lined cookie sheet in the freezer to chill.

Microwave chocolate and coconut oil in 20 second increments, stirring after each interval until smooth.
Pour into a tall thin container (like a water glass).
Working quickly, remove popsicles from the mold, dip them in the chocolate, place on the chilled parchment-lined cookie sheet, and sprinkle with Pop Rocks.
Return Pop Rock popsicles to the freezer or serve immediately.
Notes
Pop Rocks will begin to pop as soon as they make contact with water. They will not pop very much on the chocolate, but do try to keep your hands dry when working with them to keep them from prematurely popping.
