Homemade Green Tea Sprinkles

Green Tea Sprinkles

This year, I learned how to make homemade sprinkles (see my posts on strawberry sprinkles and pumpkin pie spice sprinkles).  Homemade sprinkles are shockingly simple to make and sprinkle making is completely addictive.  My pantry may soon be overrun with jars of sprinkles in a rainbow of colors and flavors.  Today, in honor of St. Patrick’s Day, I bring you naturally green sprinkles – no food coloring here!

The secret to green sprinkles is matcha green tea powder.  Matcha powder is a great green color!

Green Tea Sprinkles

The green tea sprinkles taste strongly of green tea so they aren’t a fit as a topping for every dessert or all tastes.  But, if you like green tea, you’d love these sprinkles on a vanilla shake, cake, or cupcake!  If you want to get really fancy, you could use them on my green tea cupcakes with red bean buttercream frosting.

Green Tea Sprinkles

Yield: 1 pint-sized jar of sprinkles

Green Tea Sprinkles

  • 2 cups sifted powdered sugar
  • 1/2 teaspoon salt
  • 1 egg white
  • 1 teaspoon matcha powder
  • 2 1/2 teaspoons water

  1. Mix all ingredients until fully combined.
  2. Pipe thin long lines (I used Wilton tip #4) onto parchment paper. Don't worry about the lines being perfect - you'll be breaking them up later. If you don't have a pastry tip, you can just cut a tiny hole in the corner of a sandwich bag.
  3. Leave the sprinkles out to dry overnight.
  4. Break the sprinkles up into sprinkle-sized pieces. You could use a knife for this, but it's just as easy to use your hands. They break up really easily.
