Go on – eat spoonful after spoonful of this dairy-free chocolate frosting – it’s OK. The dairy-free frosting is made using the fat from nuts (cashews specifically). To create this Nutella-like frosting that’s light, decadent, sinless, and vegan-friendly, simply soak cashews overnight to soften them, then blend the cashews with water, a touch of brown sugar, and cocoa powder. Watch out: once you try it, this dairy-free frosting might permanently overthrow your current chocolate buttercream to become your new favorite frosting. I made more dairy-free chocolate frosting than I needed and Jonathan and I have been spreading it on graham crackers all week.
Sinless Smooth and Sweet Dairy-Free Chocolate Frosting
- 3 cups unsalted cashews soaked overnight in a bowl of water
- 1/2 cup water
- 1/2 cup brown sugar
- 1/4 cup cocoa powder
Blend all ingredients until smooth.
Pipe or spread on anything and everything!
The frosting is not overly stiff. If you prefer a stiffer frosting, use less water.
