This week’s Pin of the Week chosen by Pinterest Explorer Julie Espy (White Lights on Wednesday) is oatmeal cream pie cupcakes from Julianne’s blog, Beyond Frosting. Julie says of them, “The Oatmeal Cream Pie cupcakes just screamed my childhood to me. I had an instant visceral reaction when I saw them and read the name. I could taste the Oatmeal Cream Pie, and I think I need to email Julianne about sending me a dozen, STAT. I love cupcakes that take me back and help me stay a kid at heart.”

This Week’s Outstanding Explorer
This week’s Outstanding Explorer is Julie Espy. She’s from Gilbert, Arizona, and writes the blog White Lights on Wednesday. Growing up, she always wanted to be a chef – and food blogging has enabled her to share her love of food with the world. Julie’s blog is home to sweet and savory recipes, some DIY projects, blog tips and tricks, random and fun stuff that makes her happy, and the Get Your Chef On cooking challenge. Some of my favorite recipes from White Lights on Wednesdays are Mexican hot chocolate shortbread, dark chocolate and hazelnut cheesecake bars, and banana bread Foster French toast.
Julie loves cupcakes with lots of frosting! She eats them sandwich style – ripping the bottom half of the cupcake off of the cake and putting it on top of the frosting. Her favorite Pinterest Explorer board is the Cupcake Fake-Outs board where we share cupcakes that look like other food.
Julie is the mom of two boys and she just got engaged! I’m so happy for her and I’m looking forward to seeing which cupcakes she’ll choose for her wedding!
