Valentine’s Day Cupcakes for Two in Under Ten Minutes

Sometimes you don’t want a dozen cupcakes.  This chocolate spice cupcake recipe that I created for Paula Deen makes just two cupcakes.  However, the best part is that the cupcakes can be made in the microwave and the whole thing takes under ten minutes.  Enjoy them warm with fresh whipped cream and sprinkles.

Chocolate Spice Cupcakes For Two Recipe

Valentine’s Day Cupcakes for Two in Under Ten Minutes

Yield: 2 cupcakes

Valentine’s Day Cupcakes for Two in Under Ten Minutes

Ingredients

  • 2 tablespoons all-purpose flour
  • 2 tablespoons brown sugar
  • 4 ½ teaspoons unsweetened cocoa powder
  • 1/8 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground allspice
  • 1/8 teaspoon ground ginger
  • 4 ½ teaspoons milk
  • 1 ½ tablespoons unsalted butter, melted
  • ½ egg, lightly whipped (approximately 2 tablespoons whipped egg)
  • Prepared Whipped Cream
  • Sprinkles

Instructions

  1. Whisk flour, brown sugar, cocoa powder, cinnamon, nutmeg, allspice, and ginger in a small bowl.
  2. Mix in milk, butter, and egg.
  3. Divide evenly between two silicone cupcake liners.
  4. Microwave on medium for one minute.Microwave again on medium for thirty seconds. If the cupcakes do not bounce back when lightly touched, repeat this step.
  5. Top with whipped cream and sprinkles.
  6. Serve warm.

    I love this idea…baking for two and in the microwave! I would love to do more baking for my husband but between just the 2 of us we can’t eat a dozen or 2 cupcakes fast enough. I have a cake recipe that bakes in the microwave…its awesome!

    I started Weight Watchers recently so I’ve been avoiding your blog. This came by e-mail so I figured to give it a whirl. I love the idea of only 2 cupcakes (a whole batch of 12 tend to, a la Alice, call my name).

    Ran it through the WW’s recipe builder and it comes out to only 4 Points per cupcake (I substituted light butter for regular)! I haven’t tried it yet, but will this weekend.

    Just tried it. I doubled it to share with the roommates, and the batter still fit easily in my small bowl. It’s a great little recipe, they turned out really indulgent!

    just made these but I omitted some of the spices b/c my bf doesn’t like them. They were good! Anyway, mine came out kind of spongy as opposed to fluffy. Is that how they’re supposed to be or did I do something wrong like over mix it? Would using egg beater cause this?

    Hi stef, thanks for responding! Yes I ate them warm. They tasted good, they were just so different, I wasn’t sure if I was getting the expected result or not. I am new to cupcake baking in general, so at every turn I have evaluate what I’m doing and determine if I’m doing things right. Thanks again for verifying that for me! I feel so much better now :-)

    I didn’t taste these before I gave them to someone for a birthday treat, so I can’t make any claims to taste, but I did attempt to make these. I don’t have silicone cups so I decided to try the oven. They baked for about 18 minutes at 350 degrees in regular metal cupcake pans with paper liners. They didn’t get as puffy or overflow as the picture shows, but they didn’t sink, either. Most likely, they were spiced brownies with very moist centers. I love the idea of only two cupcakes, and maybe when I get silicone cups I’ll give them a try the 10 minute way.
